Corn Slaw with Peanut Lime Sauce

Ingredients

  • 1 ½ cup corn kernels
  • 2 cups shredded green cabbage
  • 2 cups shredded purple cabbage
  • 1 cup shredded carrot
  • ¼ cup chopped cilantro
  • 2 green onions, chopped
  • 1 medium jalapeno, minced

Peanut Lime Sauce

  • ½ cup MUMGRY Smooth Peanut Butter
  • 3 tbsp lime juice
  • 1 tsp lime zest
  • 1 tbsp maple syrup
  • 2 cloves garlic, minced or grated
  • ½ tsp salt
  • ¼ tsp ground cumin
  • Water, to thin

Recipe

  1. Combine the corn, cabbage, cilantro, green onion, and jalapeno in a large bowl.
  2. In another bowl, whisk together the ingredients for the peanut dressing, adding ¼-½ cup water or so to thin the sauce to a pourable consistency. Pour over the corn slaw mixture and toss to combine and coat the slaw.
  3. Chill until ready to serve.
