Ingredients
- 1 ½ cup corn kernels
- 2 cups shredded green cabbage
- 2 cups shredded purple cabbage
- 1 cup shredded carrot
- ¼ cup chopped cilantro
- 2 green onions, chopped
- 1 medium jalapeno, minced
Peanut Lime Sauce
- ½ cup MUMGRY Smooth Peanut Butter
- 3 tbsp lime juice
- 1 tsp lime zest
- 1 tbsp maple syrup
- 2 cloves garlic, minced or grated
- ½ tsp salt
- ¼ tsp ground cumin
- Water, to thin
Recipe
- Combine the corn, cabbage, cilantro, green onion, and jalapeno in a large bowl.
- In another bowl, whisk together the ingredients for the peanut dressing, adding ¼-½ cup water or so to thin the sauce to a pourable consistency. Pour over the corn slaw mixture and toss to combine and coat the slaw.
- Chill until ready to serve.
