Veggie Banh Mi with Peanut Aioli


  • 1 large baguette
  • Baked tofu or protein of choice
  • Pickled veggies of choice (we love pickled carrot, cucumber, and jalapeno)

Peanut Aioli

  • ½ cup vegan mayonnaise
  • 2 tbsp MUMGRY Smooth Peanut Butter
  • 1 tbsp lime juice
  • 1 tsp chili garlic sauce


  1. Make the peanut aioli: Whisk together the mayonnaise, peanut butter, lime juice, and chili garlic sauce until smooth.
  2. Slice the baguette then toast if desired. Spread a couple spoon fulls of the aioli on one or both sides of the baguette, then top with the tofu and pickled veggies. Top with the other side of the baguette and enjoy!
