Peanut Ginger Ramen

Ingredients-Serves 2

  • 2 tsp avocado or coconut oil
  • 1 tbsp grated ginger
  • 2 cloves garlic, grated
  • 1 cup sliced mushrooms
  • Pinch red pepper flakes, or to taste
  • 4 cups vegetable broth
  • ⅓ cup MUMGRY Smooth Peanut Butter
  • 1 tbsp soy sauce, or to taste
  • 8 oz ramen noodles
  • Chopped green onion, to serve
  • Thinly sliced jalapeno, to serve
  • Lime wedges, to serve

Recipe

  1. Saute mushrooms in oil until mostly browned and the liquid has been released. Add ginger, garlic, and red pepper flakes and saute until no longer fragrant
  2. Add broth, peanut butter, and soy sauce. Simmer for 5 minutes to allow flavors to meld.
  3. Add the ramen noodles to the simmering broth and cook 2-3 minutes or until the noodles are done.
  4. Divide the ramen, broth, and mushrooms between two serving bowls. Top each with desired toppings such as chopped green onion and sliced jalapeno. Serve with lime wedges to squeeze into the ramen if desired.
